Sausage, Peppers, Onions, & Potatoes Sheet Pan Roast (easy and delicious)

You know the saying, “Sometimes less is more”?  Less is ALWAYS more when it comes to cleaning dishes, in my opinion. This recipe is awesome because it calls for all the ingredients to cook together on one pan in the oven, allowing the peppers, onions, and potatoes to soak up some of the flavors from the sausage.

Ingredients 

  • 3-4 Potatoes cut into bite-sized pieces.
    Any kind will do, and the amount varies by variety and how many people you’re serving. What ever variety you use, just make sure they’re all cut into uniform bite-sized pieces. Peel em’ if you want, or don’t, it’s up to you. I recommend either par-boiling the potatoes before putting them in the oven, or at least getting them started ahead of the rest of the veggies because they’ll take longer to cook.
  • 3 Peppers cut into bite-sized pieces – Use the color you like, but the more color, the better.
  • 2-3 Onions, quartered – I like quartering the onions and separating the layers for even onion distribution through the dish.
  • 1 Pack Sausages cut into bite-sized pieces – Use any sausage you prefer, and if you don’t want to cut them up, just leave them whole. It’s your world, do what you want!
  • Olive Oil/Cooking Oil
  • Italian Seasoning
  • Salt & Pepper to taste

Method

  1. 1) Preheat oven to 425° F (220° C).
  2. 2) Place oven grate on the lower center rack, that is the second from the bottom.
  3. 3) If parboiling your potatoes: Add the potatoes to a large pot of cold salted water. If not parboiling, add the potatoes directly to your sheet pan with enough oil to coat and add salt and pepper to taste and pop them in the oven. Once the potatoes have cooked for about 10 minutes and are starting to soften, pull the pan and add the rest of your ingredients as directed in the next steps.
  4. 4) Bring to a boil, reduce the heat and then simmer until tender or a knife can pierce through. This takes about 8-10 minutes all depending on how thick your potatoes are.
  5. 5) Drain the potatoes and transfer the parboiled potatoes to your sheet pan along with your peppers, onions, and sausages. Add a glug of oil and a tablespoon or so of the Italian Seasoning mix and toss the mess to coat. Be gentle! You don’t want to bust up the potatoes too much.
  6. 6) Roast everything uncovered in the over for 10-15 minutes or until the sausage has reached an internal temp of 165 degrees. Cook times will vary from stove to stove, but food born illnesses don’t discriminate, so stay safe out there.
  7. 7) Pull the pan out once the potatoes are golden, the sausage is cooked, and the peppers and onions have caught a little color. Adjust the seasoning as needed. Done!
