Hearty Burger and Bean Soup (easy and delicious)

This recipe comes from our very own Lori M! She was chef for the day and prepared Hearty Burger and Bean Soup (Serves 4-6) Soup is a wintertime staple and an easy throw together meal after a long day of shoveling.

Burger Soup

Ingredients 

  • 1-1/2 lbs ground chuck
  • 4 cups beef broth
  • 1 (64 oz) canned crushed Italian seasoned tomato
  • 1 can (28-ounces) red kidney beans (drained)
  • 1-1/2 cups chopped carrots
  • 1-1/2 cups chopped celery
  • 1 cup chopped onion
  • 3 small potatoes, diced, peel or don’t #options
  • 2 cloves garlic minced
  • 1 Tbsp chicken poultry seasoning (shhh, it’s the tasty secret)
  • Salt and pepper to tase
  • Red pepper or hot sauce could be added for a spicy addition

Method

  1. Brown hamburger in a large skillet; drain off excess grease and set aside.
  2. Sauté onion, carrots, and celery until softened, set aside.
  3. Pour beef broth, tomatoes, and garlic into a stock pan; Heat over medium-low heat.
  4. When it comes to a low boil, add potatoes until fork tender.
  5. Add the sauteed vegetables, drained beans, beef, and seasonings; cover and simmer for 20-30 minutes.
  6. Enjoy!
